If you’re in the center of town, it’s a quick snack. If you’re at a restaurant, it’s an appetizer. May I present: salchipapas. You can get them anytime you want. You can even order them in from the pizza shop!
Salchipapas are French fries, with a few little sausages. They also have a side of mayonnaise and/or ketchup. I love to get them when we are:
- at the mall
- in the center
- or just taking a midday walk.

The kids eat this all the time. There is one street vendor here in Bahia who makes the best Salchipapas in town and there is always at least 1/2 hour line up! We all get cranky waiting but we still wait because it tastes so good! What does it cost in Cuenca? Here in Bahia it is $1.25 and worth every penny!
I always mix the mayonnaise and ketchup together first, and then drizzle the mixture on the salchipapas, YUMMY! FYI- Back in the day, salchipapas were topped with a “curtido” onion/tomato/lime/salt salad, also AMAZING!
